In detail

The Rolling Sharpener is two pieces that stand on the counter: a roller in a walnut-toned wood finish with metal ends, and a small angle block with a magnetic face.

Lay the knife against the block and the magnet holds it at 15° on one side or 20° on the other. Then roll the roller back and forth along the edge, with a low hum: the sharpening end first, the honing end to finish. Your hands only roll; the block keeps the angle.

Use 15° for thin, hard knives and 20° for heavier everyday knives. Sharpen every few weeks, and wash and dry the knife before it goes back to the board.

Step by step

How to use it

  1. Clean and dry the knife.

  2. Lay the block on a flat counter and rest the blade against its magnetic face, edge pointing up and away from you: 15° for thin, hard knives, 20° for heavier everyday knives.

  3. Roll the sharpening end along the edge, back and forth, about ten times.

  4. Turn the knife and repeat on the other side, then finish with the honing end.

Questions

Before you order

Something else? Write to us from our contact page. We reply within 2 business days.

15° or 20°?

15° for thin, hard knives, 20° for heavier everyday knives. If you are not sure, check the angle the knife's maker suggests.

How often should I sharpen?

Every few weeks for a knife you use daily, with a few passes of the honing end in between. A knife that slides off a tomato skin is due.

Do I need water or oil?

No. Use it dry, on a clean, dry knife. Afterward, wipe the discs with a dry brush or cloth to remove the metal dust, then wash and dry the knife before it touches food.

Why is the block magnetic?

So the blade stays against its face while you roll, at the angle you chose. Keep it away from pacemakers and other implanted medical devices, and from cards and phones.

How do shipping and returns work?

Shipping is included in the price; there is no separate delivery charge. Orders ship within 1 to 3 business days, then take 7 to 12 business days in transit, so allow about 8 to 15 business days from order confirmation. We deliver to the 50 US states and Washington, D.C. Import duties and customs fees are paid by us. If a carrier ever asks you for any, contact us and we will cover it in full. Unused items in their original condition and packaging can be returned within 30 days of delivery. A product that arrives defective, damaged or wrong, or shows a defect within those 30 days, is replaced or refunded, even if it has been used. A broken glass lid must not be mailed back: send us photos and we replace or refund it without a return. Return shipping for a change of mind is paid by the customer; we send the return address by e-mail, and it may be outside the United States. For a defective, damaged or wrong item, we pay it. You can cancel at no charge until your order ships.
