Four kinds of cooking

What's cooking?

Start with what's on the stove tonight. Each kind of cooking has a piece that suits it.

An adult searing a salmon fillet skin-down in the Everyday Pan

Searing and breakfast

Searing and breakfast

A salmon fillet skin down, two eggs, a few blistered tomatoes. The Everyday Pan's gently sloped walls let the spatula slide right under, and the Crêpe Pan's flat base is there for anything you pour and flip.

For this

Stir-fries and sauces

Stir-fries and sauces

In the Wok, noodles and greens climb the deep walls as you toss them. The high walls of the Sauté Pan hold a sauce while you stir, and a wooden spatula does the rest.

For this

The Deep Pot of soup simmering, the Glass Lid tilted on it, an adult holding the knob with an oven mitt

Soups and slow dishes

Soups and slow dishes

The Deep Pot for soup, stew or pasta, the Wide Pan for a rice dish you bring to the table, and a Glass Lid to watch it all through.

End-grain walnut for chopping and carving, a thin metal board for fish and meat, and three nesting bowls for whatever you mix.

Everyday Pan

The pan you reach for first

11 in across, with gently sloped walls and a fine honeycomb texture from wall to wall.

  1. Facets across the whole surface

A fine honeycomb texture covers the cooking surface and fades into a spiral at the center. The outside is polished smooth.

  2. Walls that slope gently

The wall curves up gently from the base, so a spatula gets under an egg in one move.

  3. Warm it, oil it, wait

Warm the pan over medium heat, add a spoonful of oil and let it shimmer on the facets. Then let the food brown and lift away before you turn it.

  4. A lid made for it

The Glass Lid made for the Everyday Pan (11 in) sits on its rim, with a small steam vent in the glass. Sold separately.

Why the name

Hundreds of small facets

A facet is one small, flat face. Our pans carry hundreds of them, in a fine honeycomb across the cooking surface, and each one catches the light at its own angle. Look down into the pan and that light shows you the food: the oil starting to shimmer, the onion turning gold at the edge.

Boards

Three boards, three jobs

Metal for wet, messy cutting, walnut for chopping, carving and the table. Metal is harder on a knife edge than wood, so if you cut on metal, hone a little more often.

Shop boards and bowls
  • Metal cutting board$89

    Titanium Board

Thin and flat, with a slightly raised edge and a cut-out handle to lift it and hang it. After fish or meat, wash it right away with hot soapy water.

  • Thin steel board$69

    Steel Board

One ultra-thin sheet of brushed steel. Chop, lift it by the grip with one hand and slide the food straight into the pan.

  • Wood cutting board$109

    Walnut Board

End-grain walnut with a juice groove around the top. Kind to your knives, and handsome enough to carry to the table with bread and cheese.

Before the first dinner

Good to know

Three small habits for pans and boards.

Care and safety
  1. A hand held flat a few inches above the empty Everyday Pan on a low flame, a small bottle of oil beside it

    Warm the pan first

Give the empty pan a minute or two over medium heat before the oil goes in. Hold a flat hand a few inches above it, and once you feel warmth rising, add the oil. Never leave an empty pan on high heat.

  2. The cooled Everyday Pan soaking in a sink, a Coil Scrubber on the edge

    Cool, soak, scrub

Let a pan cool before it meets water. Soak it in warm soapy water, then use a Coil Scrubber on the inside, rinse and dry it with a towel.

  3. A hand rubbing oil into the Walnut Board with a folded cloth, the Wood Utensils drying beside it

    Oil the wood

When the Walnut Board or the utensils look pale or dry, rub in a little food-safe mineral oil with a folded cloth and leave it overnight. Wood never goes in the dishwasher.

Questions

Before you order

How do I cook on the honeycomb texture?

Warm the empty pan over medium heat, add a spoonful of oil and let it shimmer, then add the food and leave it alone. Turn it once it has browned. Keep the heat at medium or lower for eggs and fish.

What is the honeycomb texture?

A fine pattern of small, flat facets across the cooking surface, like the cells of a honeycomb, fading into a spiral at the center. It is where our name comes from: each facet catches the light at its own angle.

What are the pans made of, and which cooktops do they work on?

Titanium, as described by the maker. The full material and chemical declaration will be published on each product page and on our Materials & Chemicals page before the shop takes orders. We list cooktops only once the maker confirms them in writing: the confirmed list will be on each product page.

Which lid fits which pan?

Each Glass Lid is made for one pan. On the Glass Lid page, pick your pan in the Fits picker: 9 in or 10 in for the Pan Trio, 10 in for the Sauté Pan, 11 in for the Everyday Pan and the Pan Trio, 11 in for the Deep Pot, 12 in for the Wide Pan, or the Wok lid. Every size is the same price. The Crêpe Pan is used without a lid.

How do I clean the pans?

Let the pan cool first. Wash it by hand with warm soapy water and a soft sponge. For stuck-on food, soak it, then use a Coil Scrubber on the inside only. Dry it right away so water marks stay off the polished outside.

Can I use metal utensils?

We cook with wood. Metal spatulas and whisks can leave marks on the facets, while the Wood Utensils are kind to the honeycomb surface.

Titanium Board, Steel Board or Walnut Board?

The Titanium Board is thin, good for fish and meat, and you wash it with hot soapy water right after use. The Steel Board is ultra-thin: lift it by the grip and slide what you chopped into the pan. The Walnut Board is end-grain wood with a juice groove, kind to knives, and doubles as a serving board. Metal is harder on knife edges than wood, so hone a little more often if you cut on metal.

How does the Rolling Sharpener work?

Rest the knife against the magnetic face of the angle block, edge up: one side holds it at 15°, the other at 20°. Then roll the roller along the edge, the sharpening end first and the honing end to finish. The block keeps the angle, so your hands only roll. See the Rolling Sharpener.

How do shipping and returns work?

Shipping and import duties are included in every price, and orders ship with tracking to the 50 US states and Washington, D.C.: allow about 8 to 15 business days from order confirmation. Unused items in their original condition and packaging can be returned within 30 days of delivery. Because they touch food, pans, pots, lids, boards, bowls and utensils that have been used for cooking or food, and opened Coil Scrubbers, cannot be returned for a change of mind. A product that arrives defective, damaged or wrong, or shows a defect within those 30 days, is replaced or refunded, even if it has been used. A broken glass lid must not be mailed back: send us photos and we replace or refund it without a return. You can cancel an order until it ships. Returns, refunds and cancellations.

What should I watch for near the stove?

Handles, lids and pan bodies get hot while you cook: use oven mitts or a dry folded towel, and turn handles inward, away from the edge of the stove. Never leave hot oil unattended, and never heat an empty pan on high heat. If oil smokes, turn off the heat. If it catches fire, turn off the heat and cover the pan with a lid or a metal baking sheet; never use water and never carry it. If a fire does not go out, leave the room and call 911. Keep children and pets away from the stove. More on our Care & Safety page.
